- The identification of the different kinds
of truffle:
we harvest 4 kinds of truffle and also we make a strict selection. Once
the truffles are brushed, they are easily to identify for an expert.
- Selection of the different qualities:
When the truffles are cleaned and sorted according to kind, the ones among
them which have gone bad or which are woody, are sorted out. Not all of
the damaged truffles are really useless. The undamaged sides serve to make
„morceau de truffes“ ( pieces of truffle) while the others are serve
to make „brisure“ ( fragments of truffle), provided that they are in a
satisfactory state, otherwise they serve as „seeds“ to make
trufflecultures.
